Thank you so much for this! My starter is just lovely and is more than doubling. Somehow I have so much of it! I am a bit mystified how I ended up with so much- definitely more than the 1/3 of a quart jar. I am taking some out now to try to make the batter for pancakes. I am so excited it is doing so well! Thank you!
Oh wonderful! When you take out the cup for the batter, you probably will end up with 1/3 of the jar. But then you'll feed it and it will go almost to the top!
And then you can definitely try making a loaf of bread! It will be ready! I'll post tomorrow on LMLD more about it!
It will be the thickness of a loose dough rather than of pancake batter. Add 1:1 starter to flour and then 2/3 water, until you get a thickness you like working with.
Just wanted to make sure I wasn't misreading 😉 It is a loose dough and like I said VERY active. I can't wait to try your overnight pancakes tomorrow morning.
NB: I have updated the waffle recipe (after cross-checking with my Fannie Farmer recipe), so be sure you get the new version -- I adapted the King Arthur one but it doesn't call for enough butter/oil! I went with Fannie (they come out more crisp!)
No, it will be fine. You can if you want to (or for that matter you can use less!)... overnight the whole thing will ferment.
I actually set mine out on Saturday evening and by the time I went to bed, it was all bubbly -- I stuck it in the fridge and it was great on Sunday morning!

I have my usual starter in the fridge but decided to try yours to see if I like it better... it's soooo thick though and very active!
